THAI PORK WITH Lemongrass & LIME Dipping Sauce
Roasted pork tenderloin with a fragrant lemongrass and lime dipping sauce, served over green beans and egg noodles. A quick and flavorful Thai-inspired meal.
Ingredients
- 1 5/16 lbs pork tenderloin trimmed and cut into 10cm/4in pieces
- 4 clove garlic crushed
- 1 tsp freshly ground black pepper
- 1/2 tsp sugar
- 1 tbsp rice wine
- 2 tbsp fish sauce
- 3 tbsp groundnut (peanut) oil
- 1/3 lbs green beans halved
- 7/16 lbs medium egg noodles
- 0.5 lime juiced
- 2 lemongrass trimmed and tough outer leaves removed
- 1 fresh root ginger peeled
- 1 coriander (cilantro) leaves and stalks
- 1/2 tsp chilli powder
- 2 tsp sugar
- 1 tbsp fish sauce
- 1.5 limes juiced

- 1 tbsp rice wine
- 2 tbsp fish sauce

- 7/16 lbs medium egg noodles
- 1 coriander (cilantro) leaves and stalks
- 1/2 tsp chilli powder
- 2 tsp sugar
- 1 tbsp fish sauce
Prepare
- 1 5/16 lbs pork tenderloin, trimmed and cut into 10cm/4in pieces
- Crush 4 clove garlic
- Halve 1/3 lbs green beans
- Juice 0.5 lime
- 2 lemongrass, trimmed and tough outer leaves removed
- Peel 1 fresh root ginger
- Juice 1.5 limes

Step 1.
Preheat the oven to 200°C/400°F/Gas 6. Place the trimmed pork tenderloin pieces in an ovenproof dish. Add the crushed garlic, black pepper, sugar, rice wine, 1 tablespoon of fish sauce, and 1 tablespoon of groundnut oil. Mix everything together well to coat the pork. Roast for 30–35 minutes until the pork is just cooked through and tender.

Step 2.
While the pork roasts, make the dipping sauce: Trim the lemongrass stalks, remove tough outer leaves, and roughly chop. Peel and chop the ginger. Place lemongrass, ginger, coriander leaves and stalks, chilli powder, sugar, fish sauce, lime juice, and 4 tablespoons water in a mini food processor. Blend until smooth. Pour into a serving bowl, cover, and set aside to let the flavours meld.

Step 3.
Cook the green beans and egg noodles in boiling water for 4–5 minutes until the noodles are soft (or according to package directions). Drain and return to the saucepan. Add the remaining 2 tablespoons of oil, 1 tablespoon of fish sauce, and the juice of ½ lime. Mix well, cover, and set aside until the pork is ready.

When the pork is done, slice it into pieces. Serve the sliced pork with the noodles and the dipping sauce alongside.
