Prepare

  • 454 g pork tenderloin, cut into bite-size pieces
  • 0.5 medium sweet onion, sliced into 3/4-inch pieces
  • 0.5 red bell pepper, sliced into 3/4-inch pieces
  • 0.5 green bell pepper, sliced into 3/4-inch pieces
  • Chop 2 clove garlic
  • 14.8 ml cornstarch, dissolved in 2 tablespoons water

Let's Cook

  1. Step 1.

    In a large bowl, combine the pork, light and dark soy sauces, wine, and sesame oil. Let the pork marinate for 30 minutes.

  2. Step 2.

    While the pork marinates, make the sauce: In a saucepan, heat 2 tablespoons vegetable oil over high heat. Add the onion and red and green peppers and stir-fry until cooked through, 6 to 7 minutes.

  3. Step 3.

    Lower the heat to medium. Add the garlic, ketchup, sugar, pineapple chunks, pineapple juice, and Chinese red vinegar. Cook, stirring, until the sauce reduces slightly, 3 to 4 minutes.

  4. Step 4.

    Pour in the cornstarch dissolved in water and stir until the sauce bubbles up and thickens. Remove the sauce from the heat and set aside.

  5. Step 5.

    To make the coating, combine the all-purpose flour and cornstarch in a medium bowl. Dredge the marinated pork in the mixture until well coated, then shake off the excess.

  6. Step 6.

    In a wok, heat several inches of vegetable or peanut oil to 350°F (use a deep-fry thermometer). Fry the pork in small batches until golden, about 3 minutes per batch. Transfer the cooked pork to paper towels to drain.

  7. Step 7.

    Once all the pork is fried, discard the oil from the wok. Return the wok to medium heat and add the fried pork. Pour the reserved sauce over the pork and toss to coat evenly.

  8. Step 8.

    Serve the sweet-and-sour pork immediately over steamed rice.
