This super-refreshing lemonade is hugely popular in India and is commonly found served at streetside stalls or on railway platforms throughout the country. In fact, it is the unusual flavour combination of salt, pepper and spices that make it so uniquely thirst-quenching. There’s nothing better on a scorchingly hot or humid day for cooling you down. If serving to kids, you can just add sparkling water and leave out the other additions.

  • 200 g caster sugar
  • 200 ml water
  • sparkling water
  • lemon slices
  • lime slices
  • salt or black salt
  • black pepper
  • ground cumin

Prepare

  • Juice 3 lemons
  • Juice 4 limes

Let's Cook

  1. Step 1.

    In a saucepan, combine 200g caster sugar and 200ml water. Bring almost to a boil over medium heat, stirring regularly until the sugar dissolves completely. Just before it reaches a boil, remove from heat and stir in the juice of 3 lemons and 4 limes.

  2. Step 2.

    Let the syrup cool completely to room temperature. Once cool, pour it into a sterilized bottle. The syrup can be stored in the refrigerator for 3–4 weeks.

  3. Step 3.

    To serve, add 2 tablespoons of the syrup to a glass. Top with sparkling water and stir gently. Add lemon and lime slices for garnish, then sprinkle with a pinch of salt (or black salt), black pepper, and ground cumin to taste.
