Gather these ingredients — no prep needed yet.

  • 1 tbsp vegetable oil
  • 2 tsp black mustard seeds
  • 2 tsp sesame seeds
  • 2.5 cinnamon stick
  • 1 tsp chilli powder
  • 1 tsp salt
  • 2 tbsp tamarind paste
  • 3 8/15 oz brown sugar

Prepare

  • 5 fresh ginger, peeled and finely chopped (or grated)
  • 5 tomatoes, finely chopped
  • 10 pitted dates, finely chopped

Let's Cook

  1. Step 1.

    Heat the vegetable oil in a medium non-stick saucepan over medium heat. When hot, add the black mustard seeds, sesame seeds, and cinnamon stick, and let them sizzle for about 30 seconds until the seeds start to pop.

  2. Step 2.

    Once sizzling, add the chilli powder and finely chopped ginger. Cook for 2–3 minutes, stirring frequently, until fragrant. Then add the finely chopped tomatoes and salt, and cook for about 5 minutes, stirring occasionally, until the tomatoes break down and soften.

  3. Step 3.

    Add the finely chopped dates, tamarind paste, and brown sugar to the pan. Continue cooking for 10–15 minutes, stirring regularly, until the mixture thickens to a jammy chutney consistency (it should coat the back of a spoon).

  4. Step 4.

    Remove the saucepan from the heat and let the chutney cool completely. Once cool, pour it into a sterilized jar, seal, and store in the refrigerator for up to 2–3 weeks.
