Prepare

  • Chop 454 g bacon ends
  • Dice 1 large yellow onion
  • 1.81 kg collard greens, cleaned and cut
  • Slice 1 large jalapeño pepper

Let's Cook

  1. Step 1.

    In a stockpot over medium heat, brown the chopped bacon ends, stirring occasionally, until crispy and the fat is rendered, about 8–10 minutes. Remove some bacon for garnish if desired, leaving the drippings in the pot.

  2. Step 2.

    Add the diced yellow onion to the pot with the bacon drippings and cook over medium heat until the onions start to sweat and become translucent, 3–5 minutes. Stir in the minced garlic and cook for 1 minute until fragrant.

  3. Step 3.

    Pour in the chicken broth, increase the heat to high, and bring to a boil. Let it boil for 20 minutes to concentrate the flavors.

  4. Step 4.

    Reduce the heat to medium and add the water. Begin adding the cleaned and cut collard greens in batches, stirring after each addition to wilt them into the liquid. Once all greens are added, sprinkle in the seasoning salt and ground black pepper.

  5. Step 5.

    Add the sliced jalapeño and distilled white vinegar, and stir to combine. Cover the pot and simmer over medium heat for 1 hour and 10 minutes, stirring occasionally, until the greens are tender and the broth is flavorful.

    Let the collard greens cool slightly, then garnish with the reserved crispy bacon before serving.
