Slow-Cooked Collard Greens WITH HAM HOCK Gravy

- 1 large sweet onion thinly sliced

- 2 lbs bone-in smoked ham hocks ask the butcher to cut each hock into 4 pieces
- 2 bunch collard greens tough stems removed, cut into bite-size pieces
