- 2 sprig fresh thyme, leaves picked
- 14.8 ml fresh parsley, roughly chopped
Let's Cook
-
Step 1.
Bring a large pan of salted water to a boil over high heat. Add the spaghetti and cook according to packet instructions (6–8 minutes) until al dente.
-
Step 2.
While the spaghetti cooks, heat the olive oil in a large pan over medium heat. Add the garlic purée and cook, stirring, for 1 minute until fragrant but not colored.
-
Step 3.
Add the canned chopped tomatoes to the pan. Rinse the tomato can with a splash of water and add that water to the pan. Add the ground turmeric, brown sugar, thyme leaves, and crumble in the ham stock cubes. Season with black pepper and stir to combine.
-
Step 4.
Bring the sauce to a boil, then reduce to a simmer. Cook for 5 minutes, until the oil rises to the surface and pools around the edges of the pan.
-
Step 5.
Drain the spaghetti, reserving a ladleful of pasta water. Tip the spaghetti into the pan with the sauce, along with the reserved pasta water. Stir until the spaghetti is well coated.
-
Step 6.
Divide the pasta mixture between serving plates, garnish with chopped fresh parsley, and serve hot.
