Sesame-Lime PORK Lettuce CUPS
Ground pork seasoned with lime, fish sauce, and sesame oil, served in lettuce cups with cilantro and peanuts. Perfect as a starter or light lunch.

- 1 lb ground pork
- 3 clove garlic minced
- 2 tsp fresh ginger grated
- 0.25 red onion very thinly sliced
- 2 tbsp freshly squeezed lime juice
- 1 1/2 tbsp fish sauce
- 1 tbsp packed light brown sugar
- 2 tsp toasted sesame oil
- 1/4 tsp red pepper flakes
- 1/2 cup fresh cilantro leaves chopped

- 1/4 cup roasted peanuts or cashews chopped

- 1 head butter lettuce or iceberg lettuce
- 1 lb ground pork
- 2 tbsp freshly squeezed lime juice
- 1 1/2 tbsp fish sauce
- 1 tbsp packed light brown sugar
- 2 tsp toasted sesame oil
- 1/4 tsp red pepper flakes
- Kosher salt
Prepare
- Mince 3 clove garlic
- Grate 2 tsp fresh ginger
- 0.25 red onion, very thinly sliced
- Chop 1/2 cup fresh cilantro leaves
- Chop 1/4 cup roasted peanuts or cashews

Step 1.
Halve the head of lettuce and remove the core. Separate the inner leaves to get 16 to 20 leaves about 5 inches in diameter (larger leaves can be cut in half). Transfer the leaves to a plate and refrigerate until ready to serve.

Heat a heavy skillet (preferably cast-iron) over medium-high heat. Add the ground pork, minced garlic, and grated ginger. Cook, stirring occasionally, until the pork is browned, about 5 minutes. If desired, pour off and discard any excess fat from the skillet.

Reduce the heat to medium. Stir in the thinly sliced red onion, lime juice, fish sauce, brown sugar, toasted sesame oil, and red pepper flakes. Cook, stirring constantly, until the mixture becomes fragrant, about 1 minute, then remove the skillet from the heat.

Stir in about three-quarters of the chopped cilantro and season with kosher salt to taste. Transfer the pork mixture to a shallow serving bowl and garnish with the remaining cilantro and the chopped roasted peanuts or cashews.

Serve the pork mixture alongside the chilled lettuce leaves. To assemble, spoon a few tablespoons of the pork mixture into a lettuce leaf, then wrap and eat.
