Sesame
These sesame-encrusted doughnut holes are a play on Chinese fried sesame dumplings jian dui, using raised dough for an East-meets-West treat. They are coated in sesame seeds, fried or baked, and glazed with a sesame-infused sugar glaze.

- 2 cup white sesame seeds
- 2 cup water
- 1 Basic Sugar glaze
- 1 tsp toasted sesame oil

Gather these ingredients — no prep needed yet.
- 1 raised dough of choice
- 2 cup white sesame seeds
- 2 cup water
- 1 Basic Sugar glaze
- 1 tsp toasted sesame oil
Let's Cook

Step 1.
Prepare the chosen raised dough as directed through the initial chilled rise stage.

In a medium bowl, place 2 cups white sesame seeds. In another bowl, put 2 cups water.

Line a baking sheet with a lightly floured non-terry cloth dish towel and set aside.

On a lightly floured surface, roll out the dough to 1/2 inch thick. Using a doughnut or cookie cutter, cut out 1-inch circles, or with a knife cut out 1-inch squares.

Dip each dough piece into the water, then into the sesame seeds, rolling to coat evenly. Place on the prepared baking sheet, leaving at least 1/2 inch between each hole.

Cover the doughnut holes with plastic wrap and let them rise in a warm spot for about 10 minutes, until slightly puffed.

Fry or bake the doughnut holes according to your dough recipe's instructions. While they are cooling, prepare the glaze: make 1 batch Basic Sugar Glaze, but omit the vanilla and instead add 1 teaspoon toasted sesame oil along with the milk.

Dip each cooled doughnut hole into the glaze, letting excess drip off. Allow the glaze to firm slightly before serving.
