- 4 English muffins, split and toasted
- Slice 6 sweet piquante peppers
- Chop 59.1 ml fresh flat-leaf parsley

Step 1.
Heat 2 teaspoons of the olive oil in a large cast iron skillet over medium heat. Add the 2 thin slices of red onion and cook for 3 minutes, stirring occasionally.

While the onion cooks, remove the sweet Italian sausage from its casings. With wet hands, shape the sausage into four ¼-inch-thick patties.

Add the sausage patties to the skillet with the onion and increase the heat to medium-high. Flip the onion slices and cook until just tender, 2 to 3 minutes more. Then flip the patties, which should be browned on the first side.

Separate the cooked onion slices into rings and arrange them on top of the patties. Sprinkle the coarsely shredded Cheddar cheese over the onion. Continue cooking until the sausage is cooked through, 2 to 3 minutes more.

Meanwhile, heat the remaining 2 teaspoons olive oil in a large nonstick skillet over medium heat. Cook the 4 large eggs to desired doneness, about 4 to 5 minutes for runny yolks.

While the eggs cook, split and toast the 4 English muffins. Slice the sweet piquante peppers.

To assemble, place the sausage patties (with onion and cheese) on the bottom halves of the toasted English muffins. Top each with a cooked egg, sliced piquante peppers, and chopped fresh flat-leaf parsley. Serve immediately.
