Prepare

  • Dice 1 avocado
  • 4 cooked bacon, broken into pieces
  • 4 iceberg lettuce, for serving
  • 1 hard-boiled large egg, grated, for topping

Let's Cook

    In a large bowl, whisk together 2 tablespoons extra virgin olive oil, 2 tablespoons red wine vinegar, ½ teaspoon salt, and ½ teaspoon pepper until combined. Stir in the diced plum tomatoes and let them marinate while you prepare the remaining ingredients.
