Preheat the oven to 425°F. Place a medium cast-iron skillet over medium-high heat and let it get hot.

Season the 1½-inch-thick beef strip steak (about ¾ pound) with ½ teaspoon each kosher salt and black pepper.

Add 2 teaspoons olive oil to the hot skillet, then add the seasoned steak, 4 unpeeled garlic cloves, and 1 sprig fresh rosemary. Cook until the steak is browned, about 3 minutes per side.

Transfer the skillet to the preheated oven and roast until the steak reaches your desired doneness, 3 to 6 minutes for medium (an instant-read thermometer inserted into the thickest part should read 135°F for medium).

Remove the skillet from the oven. Transfer the steak to a cutting board and let it rest for at least 5 minutes before slicing. Serve the steak with the roasted garlic and rosemary.
