Gather these ingredients — no prep needed yet.

  • 2 tbsp olive oil
  • 4 tbsp fresh basil
  • 1/4 tsp black pepper

Prepare

  • 2 lbs chicken breasts, cooked, boneless, skinless, and diced
  • Mince 4 tsp garlic
  • Dice 3/8 lbs sun-dried tomatoes
  • 2 cup chicken broth, low sodium
  • 3/4 lbs chicken flavored ramen noodles, 2 packages plus one seasoning packet

Let's Cook

  1. Step 1.

    1. Heat oil in a skillet; add chicken, garlic, and tomatoes. Add some fresh, diced tomatoes if desired.  Saute for a few minutes. Then add the broth, flavor packet, basil, and pepper. Cook over high heat about 5 minutes to reduce liquid by about half.

  2. Step 2.

    Serve over warm noodles, or toss in pan with noodles.

    2. Cook noodles 3 minutes in boiling water.  Drain, cover and keep warm until ready to serve.
