  • Kosher salt and pepper
  • 56.7 g sliced American or provolone cheese

Prepare

  • 29.6 ml olive oil, divided
  • 1 medium onion, thinly sliced
  • 340 g sirloin steak, frozen for 2 hours, thinly sliced
  • 2 hoagie or hero rolls, warmed and split
  • Sautéed mushrooms or peppers, for serving

Let's Cook

  1. Step 1.

Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the thinly sliced onion, a pinch of salt, and a pinch of pepper. Cover and cook, stirring occasionally, until the onion is softened, about 8 minutes.

  2. Step 2.

Uncover the skillet and continue cooking the onion, stirring occasionally, until golden brown and very tender, 6 to 8 minutes more. Transfer the caramelized onion to a bowl and set aside.

  3. Step 3.

Wipe out the skillet with a paper towel. Add the remaining 1 tablespoon olive oil and heat over medium-high heat. Season the thinly sliced steak with ¼ teaspoon salt and ¼ teaspoon pepper. Add the steak to the hot skillet and cook, tossing occasionally, until browned and cooked through, 3 to 4 minutes.

  4. Step 4.

Lay the cheese slices evenly over the cooked steak. Cover the skillet and cook until the cheese melts, about 2 minutes. Remove from heat and gently fold the melted cheese into the steak.

  5. Step 5.

While the cheese melts, warm and split the hoagie rolls. Fill each roll with the steak mixture and top with the caramelized onions. Add sautéed mushrooms or peppers if desired.
