Let's Cook
-
Step 1.
Heat 1 tablespoon of the olive oil in a large skillet over medium heat. Add the sliced onions, ¼ teaspoon salt, and ¼ teaspoon pepper. Cover and cook, stirring occasionally, until the onions are softened, about 8 minutes.
-
Step 2.
Uncover the onions and continue cooking, stirring occasionally, until they are golden brown and very tender, 6 to 8 minutes more. Transfer the cooked onions to a bowl and set aside.
-
Step 3.
While the onions are cooking, slice the partially frozen sirloin steak as thinly as possible. Season the steak slices with ½ teaspoon salt and ½ teaspoon pepper.
-
Step 4.
Wipe out the skillet used for the onions. Heat the remaining 1 tablespoon olive oil over medium-high heat. Add the seasoned steak slices and cook, tossing occasionally, until browned and cooked through, 3 to 4 minutes.
-
Step 5.
Lay the cheese slices evenly over the cooked steak in the skillet. Cover the skillet and cook until the cheese is melted, about 2 minutes. Remove from heat and gently fold the melted cheese into the steak.
-
Step 6.
Form sandwiches by dividing the steak and cheese mixture among the warmed hoagie rolls. Top with the reserved cooked onions and, if desired, sautéed mushrooms or peppers. Serve immediately.
