  • 1 1/2 cup all-purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 3/4 cup creamy peanut butter
  • 1/3 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1/2 cup sanding sugar

Prepare

  • 1/2 cup unsalted butter, at room temperature
  • 36 miniature chocolate candy bars, unwrapped

Let's Cook

  1. Step 1.

    Heat oven to 375°F. Line 2 baking sheets with parchment paper. In a medium bowl, whisk together flour, baking soda, baking powder and salt; set aside.

  2. Step 2.

    Using an electric mixer, beat butter, peanut butter, granulated sugar and brown sugar in a large bowl on medium speed until light and creamy, 1 to 2 minutes. Beat in egg and then vanilla. Reduce speed to low and gradually add flour mixture, mixing until just combined.

  3. Step 3.

    Place sanding sugar in a small bowl. Scoop rounded tablespoonfuls of dough and drop them into sanding sugar, rolling to coat completely; transfer to the prepared sheets, spacing them 2 inches apart. Press thumb gently into center of each cookie to indent.

  4. Step 4.

    Bake, in batches, until bottoms are lightly browned, 8 to 10 minutes. Immediately press a candy bar into center of each cookie. Let cool on baking sheets on cooling racks for 10 minutes. Transfer cookies to cooling racks to cool completely.
