- 4 thin-sliced boneless, skinless chicken cutlets
- 1 tbsp olive oil
- 3 cup baby spinach

- 2 5-inch pieces baguette, split and toasted

In a small bowl, toss the thinly sliced red onion with red wine vinegar and a pinch each of salt and pepper. Let it sit while you prepare the rest of the sandwich.

Heat olive oil in a large skillet over medium-high heat. Season the chicken cutlets with ¼ teaspoon each salt and pepper. Cook until browned and cooked through, about 2 minutes per side. Transfer the cooked chicken to a cutting board.
