Collect

Gather these ingredients — no prep needed yet.

  • Kosher salt and pepper
  • 59.1 ml olive oil
  • 158 ml sour orange juice
  • 2.46 ml dried oregano
  • 2.46 ml ground cumin

Prepare

  • 4 large cloves garlic, pressed

Let's Cook

  1. Step 1.

Place the garlic cloves on a cutting board, sprinkle with ¾ teaspoon kosher salt, and use the flat side of a chef's knife to mash and scrape the garlic into a smooth paste.

  2. Step 2.

Transfer the garlic paste to a medium bowl. Add the sour orange juice (or the mixture of lime and orange juices), olive oil, dried oregano, ground cumin, and ¼ teaspoon black pepper. Stir with a fork or whisk until well combined and the salt is dissolved.

  3. Step 3.

Let the sauce sit at room temperature for about 5 minutes to allow the flavors to meld before serving.
