  • 2 large eggs
  • 2.46 ml dried oregano
  • Kosher salt and pepper
  • 454 g ground beef
  • 454 g Campari tomatoes
  • 14.8 ml olive oil

Prepare

  • 4 garlic cloves, 2 finely chopped, 2 pressed
  • 473 ml baby spinach, 1 cup finely chopped, 1 cup finely sliced
  • 59.1 ml Parmesan cheese, finely grated

Let's Cook

  1. Step 1.

    Heat the broiler and line a rimmed baking sheet with nonstick foil.

  2. Step 2.

    Tear the baguette into pieces and soak in ¼ cup water until absorbed, then squeeze out all the moisture and transfer to a large bowl.

  3. Step 3.

    Add the eggs, chopped garlic, chopped spinach, Parmesan, oregano, and ½ teaspoon each salt and pepper to the bowl with the bread. Mix to combine.

  4. Step 4.

    Add the ground beef to the bowl and mix until just combined. Form into tiny balls (about 1 level teaspoon each, about 92 balls) and place on the prepared baking sheet.

    Broil the meatballs until browned, 6 to 8 minutes.

    While the meatballs are broiling, halve the tomatoes and arrange them cut sides up on a second rimmed baking sheet. Drizzle with olive oil and sprinkle with pressed garlic and a pinch each of salt and pepper.

    Broil the tomatoes until the garlic is fragrant, 3 to 4 minutes.

  8. Step 8.

    Serve the meatballs with the broiled tomatoes and the sliced spinach.
