Step 1.
Scrub 6 potatoes thoroughly, then pare (peel) them. Drop the peeled potatoes into a bowl of cold water as you work to prevent browning. If the potatoes are old or have been frozen, let them stand in cold water for 30 minutes.

Place the potatoes in a large pot and add enough boiling water to cover them. Cover the pot and cook over medium-high heat for 20 to 30 minutes, until the potatoes are tender when pierced with a fork. When the potatoes are nearly done, add 1 teaspoon of salt to the water.

Drain the potatoes well in a colander. Return them to the pot or transfer to a mixing bowl. Use a potato ricer or masher to mash the potatoes until smooth.

Add 2 tablespoons of butter and ⅓ cup of hot milk to the mashed potatoes. Beat with a fork until the mixture is creamy and fluffy.

Step 5.
Pile the mashed potatoes lightly onto a warmed serving dish. Keep them warm, for example in a chafing dish over hot water, until ready to serve. Just before serving, dot the top with additional butter and sprinkle with paprika.
