- 6 tsp sugar
- 3 tsp white vinegar

- 3 mango, peeled pitted and cut into 18 inch dice
- 1 cup red onion, finely diced
- 3 tbsp lime juice, freshly squeezed
- 1 1/2 tsp habanero pepper, minced fresh habanero pepper or 2 tablespoons minced fresh serrano chilies
- 4 1/2 tbsp cilantro, finely chopped
- 3 tsp mint, finely chopped
- 6 tbsp red bell peppers, finely diced

Peel, pit, and cut mango into 1/8-inch dice.

In a bowl, combine mango, red onion, kosher salt, sugar, white vinegar, lime juice, minced habanero pepper, chopped cilantro, chopped mint, and optional red bell peppers.
