M5-Rubbed Crispy KALE
Crispy kale chips seasoned with a homemade M5 Spice Rub, roasted until crunchy. A nutritious snack or side dish.

- 1/2 lbs torn kale
- 8 cup packed kale
- 2 bunches kale
- 3 tbsp extra-virgin olive oil

Step 1.
Preheat the oven to 400°F. In a small bowl, combine 1½ teaspoons kosher salt, 1 teaspoon red pepper flakes, ½ teaspoon each dried rosemary, dried thyme, and flaky sea salt, and a pinch each of freshly ground black pepper and garlic powder. Mix well to make the M5 Spice Rub; you'll have about 1½ tablespoons. Set aside 1 scant teaspoon for this recipe and save the rest for another use.

Step 2.
Place 8 ounces torn kale (about 8 packed cups, from 2 bunches, center ribs removed and leaves torn into roughly 2-inch pieces) on a large baking sheet. Drizzle with 3 tablespoons extra-virgin olive oil, then use your hands to mix, rub, and toss until every piece is lightly coated with oil.

Step 3.
Sprinkle the 1 scant teaspoon of M5 Spice Rub evenly over the kale, then toss again to distribute. Spread the kale in a single even layer across the baking sheet.

Step 4.
Roast the kale on the middle or bottom oven rack for 10 minutes. If desired, you can bake something else at the same time, such as Anytime Sourdough Garlic Bread.

Step 5.
Remove the baking sheet from the oven and stir the kale. Return to the oven and roast for another 5 to 7 minutes, until the kale is crisp and browned in spots. Transfer to a serving bowl and serve warm or at room temperature.
