Prepare

  • Drain 1 diced tomatoes
  • 29.6 ml fresh ginger, grated peeled
  • 680 g boneless, skinless chicken thighs, trimmed and halved lengthwise
  • 1 cauliflower, cored and cut into small florets
  • 1 medium onion, finely chopped
  • 118 ml fresh cilantro, roughly chopped

Let's Cook

  1. Step 1.

    In a 5- to 6-quart slow cooker, whisk together the drained diced tomatoes, tomato paste, grated ginger, curry powder, ½ teaspoon salt, and ¼ teaspoon pepper until well combined.

    Add the halved chicken thighs, cauliflower florets, finely chopped onion, and golden raisins to the slow cooker. Stir to coat everything evenly with the tomato mixture.

  3. Step 3.

    Cover the slow cooker and cook on high for 4 to 5 hours or on low for 6 to 7 hours, until the chicken is cooked through and tender.

  4. Step 4.

    Spoon the chicken and cauliflower mixture over cooked long-grain white rice. Top with chopped fresh cilantro. Serve with Greek yogurt and lemon wedges on the side, if desired.
