- Slice 1 small red bell pepper
- Slice 1 small yellow bell pepper
- 1 poblano pepper, halved and thinly sliced
- 1 small jalapeño, halved and thinly sliced

Heat the oven to 500°F (or 475°F if your oven can't reach 500°F without broiling).

On a lightly floured surface, shape the pizza dough into a 14-inch oval. Place the dough on a cornmeal-dusted or parchment-lined baking sheet. Sprinkle the shredded Cheddar evenly over the top.

In a large bowl, toss the sliced onion, red bell pepper, yellow bell pepper, poblano pepper, and jalapeño with the olive oil and ¼ teaspoon each salt and pepper. Scatter the vegetable mixture over the dough.
