Gather these ingredients — no prep needed yet.

  • Kosher salt and pepper
  • 1 tbsp olive oil
  • 1 small ripe pineapple
  • 1/4 cup lime juice
  • 0.25 medium red cabbage
  • 1 slider rolls

Prepare

  • 1 3/4 lbs pork shoulder, trimmed and cut into 4 pieces
  • 0.5 small red onion, thinly sliced
  • Chop 1 cup fresh cilantro

Let's Cook

  1. Step 1.

    Season the pork with 1 teaspoon each salt and pepper. Press Sauté on the Instant Pot, add the oil and cook the pork, turning occasionally, until browned on all sides, about 7 minutes. Press Cancel.

  2. Step 2.

    While the pork browns, peel and core the pineapple. Cut half of it into 1-inch pieces and set aside. Thinly slice the remaining pineapple into rounds, then cut crosswise into matchsticks and reserve for the slaw.

  3. Step 3.

    Add the 1-inch pineapple pieces to the Instant Pot with the pork. Cover and lock the lid. Cook on high pressure for 35 minutes. Let the pressure release naturally for 10 minutes, then manually release any remaining pressure.

  4. Step 4.

    While the pork cooks, in a large bowl, toss the onion, lime juice, and ¼ teaspoon each salt and pepper. Core the cabbage, then finely shred it and toss with the onion mixture. Set aside.

  5. Step 5.

    Transfer the pork and cooked pineapple to a bowl and shred the pork into pieces. Add ½ cup of the cooking liquid from the Instant Pot and toss to coat.

  6. Step 6.

    Cut the slider rolls horizontally (do not break apart) and place the bottom halves on a platter. Toss the reserved pineapple matchsticks with the cabbage mixture, then fold in the cilantro. Spoon the pork mixture onto the bottom rolls, then top with the slaw. Sandwich with the top halves of the rolls.
