Greek-Style Meatballs
These Greek-style meatballs are made with lean ground beef, feta cheese, and oregano, served with air-fried red potatoes and tzatziki sauce.

Prepare
- 1 lb red potatoes, cut into 1-inch chunks
- Grate 0.5 small red onion
- Chop 1/4 cup fresh flat-leaf parsley
- 1 large egg, lightly beaten

Heat the air fryer to 400°F. In a medium bowl, toss the potato chunks with olive oil, ¼ teaspoon salt, and ⅛ teaspoon pepper until evenly coated.

Place the seasoned potatoes in the air fryer basket and cook, shaking the basket occasionally, until browned and cooked through, about 14 minutes. Transfer the cooked potatoes to a plate and set aside.

While the potatoes are cooking, in a large bowl, combine the ground beef, crumbled feta, grated red onion, breadcrumbs, chopped parsley, beaten egg, dried oregano, and ¼ teaspoon each salt and pepper. Mix gently until just combined, then form the mixture into 12 meatballs, each about ¼ cup.

Thread the meatballs onto 6-inch skewers that have been soaked in cold water for at least 15 minutes to prevent burning. Place the skewered meatballs in the air fryer basket and cook, turning once halfway through, until cooked through, about 10 minutes. Transfer to a plate.

Return the cooked potatoes to the air fryer basket and heat until hot, about 2 minutes. Serve the potatoes and meatballs with tzatziki sauce and lemon slices, and sprinkle with additional chopped parsley if desired.
