Step 1.
Wash the greens thoroughly, cutting off any small roots. Select 1 peck of your choice of greens, ensuring they are tender and fresh.

Place the washed greens into a large uncovered pot and fill the pot two-thirds full with boiling water. Cook until the greens are tender, then drain them.

Return the drained greens to the pot. Add sliced salt pork and 1 quart of boiling water. Cook uncovered for about 1 ½ hours, or until the water evaporates. Taste the greens periodically; cooking time may vary depending on the tenderness of the greens.

If the greens taste too bitter when done, stir in a splash of cider vinegar to balance the flavor. Serve immediately. Serves 4 to 6.
