Gingerbread
A twist on classic gingerbread doughnuts made with chocolate cake dough and spiced with cinnamon, ginger, and cloves. Glazed with ginger glaze and topped with crystallized ginger chips.

- 1 tsp ground cinnamon
- 1 tsp ground ginger
- Pinch of ground cloves
- 1 cake dough of choice
- 1/3 cup brown sugar
- 2 tbsp molasses
- 1 Ginger glaze
- 2 tbsp crystallized ginger chips

- 1 tsp ground cinnamon
- 1 tsp ground ginger
- Pinch of ground cloves
- 1 cake dough of choice
- 1/3 cup brown sugar
- 2 tbsp molasses
- 1 Ginger glaze
- 2 tbsp crystallized ginger chips

Step 1.
In a small bowl, mix together 1 teaspoon ground cinnamon, 1 teaspoon ground ginger, and a pinch of ground cloves until combined.

Prepare 1 batch of your chosen cake dough as directed, but replace the nutmeg specified in the recipe with the spice mixture you just made, and replace the superfine sugar with ⅓ cup brown sugar. Add 2 tablespoons molasses along with the vanilla extract called for in the dough recipe.

Step 3.
Fry or bake the doughnuts according to the original dough recipe's instructions. For traditional doughnuts, shape and fry or bake as directed; for drop doughnuts, drop spoonfuls of dough into hot oil or onto a baking sheet.

After the doughnuts have cooled slightly, glaze them with 1 batch of Ginger glaze. If desired, sprinkle with 2 tablespoons crystallized ginger chips while the glaze is still wet.
