  • 1/2 lbs ground pork
  • 2 tbsp lime juice
  • 1 tbsp low-sodium soy sauce
  • 1/2 tbsp low-sodium soy sauce
  • 1/2 tsp brown sugar
  • 1/2 cup fresh cilantro
  • 1/4 cup fresh mint
  • Cooked rice

Prepare

  • 1 clove garlic, finely chopped
  • 0.5 small red chile, finely chopped
  • 1 tbsp fresh ginger, peeled and grated
  • 1 tsp fresh ginger, peeled and grated
  • Slice 0.5 seedless cucumber
  • Slice 1 scallion

Let's Cook

  1. Step 1.

    Heat 1 tablespoon canola oil in a cast-iron skillet over medium-high heat until shimmering. Add 8 ounces ground pork and cook, breaking it up with the back of a wooden spoon, until browned, about 7 minutes.

  2. Step 2.

    Add 1 finely chopped garlic clove, ½ finely chopped small red chile, and 1 tablespoon grated fresh ginger to the skillet. Toss with the pork and cook for 30 seconds until fragrant, then remove from heat.

  3. Step 3.

    Stir in 1 tablespoon lime juice and ½ tablespoon low-sodium soy sauce. If the mixture seems dry, add 2 tablespoons water and toss to combine.

  4. Step 4.

    In a separate bowl, whisk together the remaining 1 tablespoon lime juice, ½ tablespoon soy sauce, 1 teaspoon grated ginger, and ½ teaspoon brown sugar until the sugar dissolves.

  5. Step 5.

    Add ½ sliced seedless cucumber and 1 sliced scallion to the dressing. Toss to coat, then gently fold in ½ cup fresh cilantro and ¼ cup fresh mint.

    Serve the pork over cooked rice, with the cucumber salad on the side.
