Feta, Walnut & Nigella SEED Salad

Prepare

- 1 green chilli, deseeded and finely chopped
- 1 tarragon leaves, roughly chopped
- 2 parsley leaves, roughly chopped
- 2 mint leaves, roughly chopped

Step 1.
In a small bowl, whisk together the lemon juice and olive oil. Season with a generous pinch of salt and black pepper. Add the finely sliced spring onions and stir to combine. Set aside for 5 minutes to mellow the raw onion flavor.

While the dressing sits, roughly chop the walnuts and crumble the feta cheese. Finely chop the deseeded green chilli, and roughly chop the tarragon, parsley, and mint leaves.

Place half of the chopped walnuts and half of the crumbled feta into a large mixing bowl. Pour the dressing over the top, then add the chopped green chilli, tarragon, parsley, and mint. Toss everything together until well combined.

Divide the salad evenly among four serving plates. Sprinkle the remaining walnuts, remaining feta, and the nigella seeds over each portion. Serve immediately.
