Let's Prepare

Collect

Gather these ingredients — no prep needed yet.

  • 1/2 cup quick-cooking farro
  • 1 1/2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1/4 tsp ground cumin
  • 1/4 tsp ground coriander
  • red pepper flakes
  • Kosher salt and pepper
  • 1/4 cup fresh parsley leaves

Prepare

  • 0.5 clove garlic, pressed
  • 0.25 small red onion, finely chopped
  • 1/2 lbs tomatoes of mixed sizes and colors, cut into pieces
  • 1 small seedless cucumber, cut into pieces

Let's Cook

  1. Step 1.

Cook the farro according to the package directions, typically by simmering in salted water until tender, about 10-15 minutes for quick-cooking farro. Drain any excess water and set aside.

  2. Step 2.

While the farro cooks, in a medium bowl, whisk together 1½ tablespoons olive oil, 1 tablespoon red wine vinegar, ½ clove pressed garlic, ¼ teaspoon ground cumin, ¼ teaspoon ground coriander, ⅛ teaspoon red pepper flakes, and ¼ teaspoon each kosher salt and black pepper until well combined.

  3. Step 3.

Stir the finely chopped red onion into the dressing, then add the tomato pieces and cucumber pieces. Toss to coat evenly with the dressing.

  4. Step 4.

Fold the cooked farro and fresh parsley leaves into the tomato-cucumber mixture until evenly combined. Serve immediately or at room temperature.
