  • 4 tbsp vegetable oil
  • 1 tsp fenugreek seeds
  • 1 large dried red chilli
  • 1/4 tsp ground turmeric
  • chilli powder
  • 1 tsp salt
  • 1 tsp caster/granulated sugar
  • 13 8/15 tbsp full-cream/whole milk

Prepare

  • 1 large white onion, chopped into 1cm/½ inch cubes
  • 1 pumpkin, peeled and chopped into 5cm/2 inch chunks

Let's Cook

  1. Step 1.

    Heat 4 tbsp vegetable oil in a large non-stick frying pan over medium-high heat. When hot, add 1 tsp fenugreek seeds and fry until they turn golden, about 30 seconds. Add 1 large dried red chilli and 1 large white onion (chopped into 1cm cubes). Fry for 8 minutes, stirring occasionally, until the onion has softened and turned deep brown.

  2. Step 2.

    Add the cubed pumpkin (500g, peeled and chopped into 5cm chunks), ¼ tsp ground turmeric, ⅛ tsp chilli powder, 1 tsp salt, and 1 tsp caster sugar. Stir to combine. Partially cover the pan, reduce heat to low, and simmer gently for 20 minutes, stirring occasionally, until the pumpkin is tender and cooked through.

  3. Step 3.

    When the pumpkin is soft, turn the heat up to high. Pour in 200ml full-cream milk. Cook vigorously, stirring constantly, for 5 minutes until the sauce is thick and creamy. Serve immediately.
