Step 1.
In a medium bowl, combine 1½ cups (180 grams) sifted confectioners' sugar and a pinch of kosher salt. Slowly stir in 3 to 4 tablespoons freshly squeezed citrus juice, a little at a time, until the mixture forms a smooth, pourable glaze. You may not need all the juice; stop when the glaze is thin enough to coat a spoon but not runny.

Step 2.
Dip the top of each doughnut into the glaze, gently shaking off any excess. For an allover glaze, flip and dip the other side as well. Place the glazed doughnuts on a wire rack and let the glaze set for 5 to 10 minutes until firm.
