Chocolate-Hazelnut Filled

- 118 ml heavy cream
- 1 Chocolate or Basic Sugar glaze

Step 1.
Prepare the chosen raised dough recipe for filled doughnuts and fry them according to the recipe directions. Let the doughnuts cool completely before filling.

In a medium bowl, combine 1 cup chocolate-hazelnut spread and ½ cup heavy cream. Using a hand mixer on medium speed, whip until the mixture is smooth and fluffy, about 1–2 minutes.

Step 3.
Spoon the chocolate-hazelnut cream into a pastry bag fitted with a Bismarck (#230) tip. Hold a cooled doughnut in one hand and plunge the tip into the side of the doughnut, pushing it about ¾ inch deep.

Step 4.
Gently squeeze the pastry bag to fill the doughnut with the cream, withdrawing the tip slowly as you squeeze. You will feel the doughnut expand slightly as it fills. Repeat with the remaining doughnuts.

Glaze the top of each filled doughnut with your choice of Chocolate or Basic Sugar glaze. Let the glaze set before serving.
