  • 3/4 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1/2 cup whole milk
  • 1 cup all-purpose flour
  • 2 tbsp cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp salt

  • 1/2 cup unsalted butter, cut into cubes
  • Chop 3 oz dark chocolate
  • Bring 2 large eggs to room temperature
  • Freshly whipped cream, for topping

  1. Step 1.

    To prepare blackberry sauce, combine blackberries, sugar, and lemon juice in a small saucepan over medium heat. If using fresh blackberries, add 2 tablespoons water. Bring to a simmer, stirring and crushing the berries with the back of a wooden spoon. Simmer for 5 to 7 minutes, until the sugar is dissolved and the berries begin to break down.

    Transfer the blackberry mixture to a blender or food processor and pulse until smooth. Press through a fine mesh sieve into a bowl to remove seeds. Set aside. (The sauce can be made a day ahead and refrigerated; warm in a saucepan over low heat before serving.)

    For the waffles, melt butter and chopped dark chocolate together in a small saucepan or double boiler over low heat, stirring until smooth. Remove from heat and stir in sugar until combined.

    Whisk in the eggs and vanilla extract until smooth, then whisk in the milk until fully incorporated.

    Add flour, cocoa powder, baking powder, and salt to the chocolate mixture. Stir with a spatula until just combined; do not overmix. The batter will be thick.

    Preheat a Belgian waffle iron according to the manufacturer's instructions. Drop about ½ cup batter onto the center of the hot iron (adjust amount for your iron size). Close the lid and cook until the waffle is crispy and cooked through, about 3–5 minutes depending on your iron.

    Serve the waffles warm, drizzled with blackberry sauce and topped with fresh blackberries and a dollop of freshly whipped cream, if desired.
