Chilli & Basil Scallops
Quick and flavorful Asian-inspired scallops stir-fried with garlic, chili, and basil. Ready in minutes, perfect for a speedy dinner.
Ingredients
- 2 tbsp vegetable oil
- 4 clove garlic finely chopped
- 2 red chillies deseeded and finely chopped
- 1 red onion finely sliced
- 500 g scallops
- 1 tbsp light soy sauce
- 1 tbsp fish sauce
- 1/4 tsp sugar
- 1/2 tsp coarsely ground black pepper
- 2 basil leaves roughly chopped

- 2 tbsp vegetable oil
- 500 g scallops
- 1 tbsp light soy sauce
- 1 tbsp fish sauce
- 1/4 tsp sugar
- 1/2 tsp coarsely ground black pepper
Prepare
- 4 clove garlic, finely chopped
- 2 red chillies, deseeded and finely chopped
- 1 red onion, finely sliced
- 2 basil leaves, roughly chopped

Step 1.
Heat the vegetable oil in a large wok over high heat until smoking hot. Add the finely chopped garlic and deseeded, finely chopped red chillies, and stir-fry for about 30 seconds until fragrant.

Add the finely sliced red onion and stir-fry for 1 minute. Then add the scallops and stir-fry for 1–2 minutes, until the scallops start to turn golden at the edges.

Pour in the light soy sauce and fish sauce, then sprinkle in the sugar and coarsely ground black pepper. Mix well and stir-fry for 1 minute, until the scallops are just cooked through and tender.

Add the roughly chopped basil leaves, mix well, and serve immediately. Optionally, serve on scallop shells.
