  • 4 celery stalks
  • 1 tsp dried thyme
  • 3 quart chicken broth
  • 1 tbsp hot sauce
  • Salt and pepper
  • 2 cup flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp sugar
  • 1 egg
  • 1 1/4 cup milk

Prepare

  • Chop 1 onion
  • 4 carrots, peeled and sliced
  • 1 1/2 lbs chicken, bones and skin removed

Let's Cook

  1. Step 1.

    Heat oil in a large pot over medium-high heat. Cook onion until translucent. Add carrot, celery, thyme, and broth. Boil and then add hot sauce, salt, pepper, and chicken. Simmer until chicken is cooked, about 15 minutes. While chicken cooks, whisk together everything else.

  2. Step 2.

    When chicken is cooked, scoop it out of the pot and let cool. Keep stock simmering. Shred cooled chicken and return to stockpot. Bring to a boil and add dumpling batter in big spoonfuls. Simmer, covered, 10 minutes. Serve immediately. Makes good dinner for 6, or 4 if you have big eaters.
