Prepare

  • 3/4 lbs cherries, smashed, pits removed
  • 1/4 cup lime juice, freshly squeezed

Let's Cook

  1. Step 1.

    Smash ¾ pound (about 2 cups) fresh or frozen cherries with the side of a knife, removing pits. In a small saucepan, combine the smashed cherries, 1 cup water, and ⅓ cup sugar. Bring to a boil over high heat, then reduce heat to low and simmer for 15 minutes, stirring occasionally.

  2. Step 2.

    Remove the saucepan from heat. Strain the cherry syrup through a fine-mesh sieve into a jar, pressing on solids to extract as much liquid as possible. Stir in ¼ cup freshly squeezed lime juice (from 2–3 medium limes) to taste. Let the syrup cool to room temperature (you should have about 1 cup).

  3. Step 3.

    While the syrup cools, prepare the glasses. For cocktails: Fill eight 12-ounce glasses with ice. In each glass, stir together 2 tablespoons gin and 1–2 tablespoons of the cooled syrup. Top with tonic water to taste, stir gently, and garnish with a lime wedge.

  4. Step 4.

    For kid drinks: Fill eight 12-ounce glasses with ice. Add 2 tablespoons (or to taste) of the cooled syrup to each glass, then fill the rest of each glass with soda water. Garnish with a lime wheel.
