  • 59.1 ml pesto
  • Kosher salt and pepper

Prepare

  • 59.1 ml goat cheese, crumbled
  • 22.2 ml olive oil, divided
  • Trim 340 g green beans
  • 2 large garlic cloves, thinly sliced

Let's Cook

  1. Step 1.

    Insert a knife into the thickest part of each chicken breast and move it back and forth to create a 2½-inch pocket that is as wide as possible without cutting through the other side.

  2. Step 2.

    Using a spoon, divide the pesto and goat cheese among the pockets. Rub the chicken with ½ tablespoon olive oil, then season with kosher salt and pepper.

  3. Step 3.

    Lay the prosciutto slices on a cutting board and place a few small basil leaves in the center of each. Place a chicken breast on top and wrap the prosciutto around the chicken, then place seam side down in the air fryer basket. Air fry at 375°F for 6 minutes.

  4. Step 4.

    While the chicken air fries, toss the green beans and sliced garlic with the remaining 1 tablespoon olive oil and ¼ teaspoon each salt and pepper.

  5. Step 5.

    After 6 minutes, move the chicken to one side of the air fryer basket and place the green beans on the other side. Continue air frying until the chicken is cooked through (internal temperature reaches 165°F) and the green beans are just tender and slightly charred, about 6-8 minutes more. Serve with tomato salad if desired.
