Let's Cook
-
Step 1.
In a saucepan over medium heat, melt ½ cup (1 stick) butter. Stir in ½ cup cornstarch, 1 teaspoon salt, and ½ teaspoon ground white or black pepper until smooth.
-
Step 2.
Gradually add 1 teaspoon Worcestershire sauce, ¼ cup dry white wine, and 4 cups milk, stirring constantly to combine.
-
Step 3.
Bring the mixture to a boil over medium-high heat, then cook for about 2 minutes, stirring constantly, until the sauce thickens and coats the back of a spoon.
-
Step 4.
Reduce the heat to low and add 1 cup (4 ounces) shredded cheddar cheese and 1 cup (4 ounces) shredded Monterey Jack or Havarti cheese. Stir until the cheeses are completely melted and the sauce is smooth. Remove from heat.
-
Step 5.
While the sauce simmers, prepare the broccoli: Cut each head of broccoli into quarters, trimming off the hard stem ends. Bring 1 inch of water and the remaining 1 teaspoon salt to a boil in a large pot. Add the broccoli quarters, cover, and boil for 4 minutes. Remove from heat, pour off the water, then cover the pot and let the broccoli steam for 4 more minutes. Uncover and rinse the broccoli with cold water to stop the cooking; drain well.
-
Step 6.
Place broccoli quarters on plates and pour the cheese sauce over them. Sprinkle with paprika if desired. Serve warm.
