Step 1.
Prepare the Chocolate Cake dough as directed in your recipe. On a lightly floured surface, roll the dough out to about 1/4 inch thick.

Cut the dough into rectangles measuring 1 by 2 inches. You should have 15 to 20 rectangles total.

Cut your favorite meltable candy (such as caramel, peanut butter cups, or chocolate kisses) into 1/2-inch pieces. Place one candy piece about 1/2 inch from one short edge of a dough rectangle.

Fold the opposite short edge over the candy to enclose it completely, forming a small packet. Press the edges lightly with your fingers to seal the dough around the candy. Repeat with remaining dough and candy.

Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the filled doughnuts in batches, without crowding, for about 2 to 3 minutes per side, until golden brown and puffed. Use a slotted spoon to transfer to a paper towel-lined plate to drain.

While the doughnuts are still warm, you can glaze them with Basic Sugar glaze if desired, or dust with confectioners' sugar or Dutch-processed cocoa powder. Serve warm for the best oozy center.
