Blackberry-Glazed Ribs
Pork ribs are seasoned with a spice rub, baked until tender, then glazed with a sweet-tart blackberry sauce. This Pacific Northwest-inspired dish is perfect for summer gatherings.

Prepare

Step 1.
Preheat the oven to 375°F.

Step 2.
In a small bowl, combine 1 tablespoon seasoning salt, 2½ teaspoons onion powder, 2 teaspoons garlic salt, 2 teaspoons paprika, 1 teaspoon red pepper flakes, and 1 teaspoon ground black pepper. Stir well and set aside.

Step 3.
Place the 5 pounds pork ribs (membranes removed) on a flat surface and drizzle with 3 tablespoons extra-virgin olive oil. Rub the oil all over the ribs, then generously season both sides with the seasoning mixture.

Place the ribs in a baking dish or rimmed baking sheet, cover with foil, and bake for 1 hour.

While the ribs bake, make the blackberry glaze: In a medium saucepan over medium heat, combine 6 ounces fresh blackberries, ½ cup barbecue sauce, ½ cup blackberry jam, ¼ cup water, 2 tablespoons light brown sugar, 1 tablespoon red wine vinegar, and 2 teaspoons extra-virgin olive oil. Mash the blackberries with a spoon and cook, stirring occasionally, until thickened, about 15 minutes. Remove from heat and set aside.

Remove the baking dish from the oven and discard the foil. Heavily brush the blackberry glaze on both sides of the ribs.

Bake the ribs, uncovered, for 30 more minutes. Remove from the oven and let cool slightly before serving.
