Prepare

  • 1 aubergine (eggplant), cut into wedges about 1.5cm/⅝in-thick wedges
  • 0.5 red onion, finely chopped
  • 100 g cherry tomatoes, cut into quarters
  • 1 green (bell) pepper, deseeded and finely chopped
  • 0.5 red chilli, deseeded and finely chopped

Let's Cook

  1. Step 1.

    Heat the vegetable oil in a large frying pan or skillet over medium heat. Add the aubergine wedges and stir well to coat all pieces in oil. Cook, stirring occasionally, for 6 minutes until the aubergine starts to soften.

  2. Step 2.

    Add the garlic clove to the pan and continue cooking for 2 minutes, stirring occasionally, until the aubergine is tender and cooked through and the garlic is just turning golden.

  3. Step 3.

    Stir in the tomato purée, soy sauce, sugar, freshly ground black pepper, and lime juice. Cook for 1 minute, stirring constantly, until the sauce is well combined and slightly thickened.

  4. Step 4.

    Transfer the aubergine mixture to a large mixing bowl. Add the finely chopped red onion, quartered cherry tomatoes, finely chopped green bell pepper, and finely chopped red chilli. Toss everything together until evenly mixed. Serve immediately.
