Apricot-Braised Lamb Shanks
Lamb shanks are braised with apricots, raisins, and orange juice in an Instant Pot for a sweet and savory dish. Serve with the rich sauce.

Prepare
- Chop 1 medium onion
- Grate 14.8 ml grated peeled fresh ginger
- 2 clove garlic, pressed
- 3 carrots, cut into 1½-inch chunks
Let's Cook

Step 1.
Season the lamb shanks with ½ teaspoon salt and ⅛ teaspoon pepper, then dredge them in the all-purpose flour, shaking off any excess.

Press the Sauté function on the Instant Pot and heat the olive oil. Add the lamb shanks, two at a time, and cook for 5 minutes per side until browned. Transfer the browned shanks to a plate.

Add the chopped onion to the pot and cook for 3 minutes, stirring occasionally, until softened. Stir in the grated ginger and pressed garlic and cook for 1 minute. Press Cancel to stop the Sauté function.

Step 4.
Return the lamb shanks to the pot. Add the diced tomatoes with their juice, carrot chunks, dried apricots, and raisins. In a measuring cup, stir together the orange juice, honey, ½ teaspoon salt, and ⅛ teaspoon pepper, then pour the mixture over the shanks.

Step 5.
Cover the Instant Pot, lock the lid, and cook on high pressure for 35 minutes. Once the cooking is complete, allow the pressure to release naturally (do not use quick release).

Serve the lamb shanks with the sauce from the pot.
