Gather these ingredients — no prep needed yet.

  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp unsalted butter or coconut oil
  • 1/2 cup brown sugar
  • 1 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 1 glaze of choice
  • flaky sea salt for garnish

Prepare

  • 1 1/2 cup sharp cheddar cheese, shredded, divided
  • 1 1/2 cup apple, peeled and diced

Let's Cook

  1. Step 1.

    Prepare the chosen dough as directed, but reduce the butter specified by half and stir in 1 cup of the shredded sharp cheddar cheese along with it. Proceed with the dough through the initial chilled rise stage.

  2. Step 2.

    While the dough rises, in a small bowl, combine the peeled and diced apples with the lemon juice and stir to coat. Set aside.

  3. Step 3.

    In a medium skillet over medium-low heat, melt the butter. Add the apples (with any lemon juice), brown sugar, flour, cinnamon, and salt. Cook, stirring occasionally, until the apples soften and the liquid becomes a syrupy consistency, about 15 minutes. Transfer the apple mixture to a bowl, cover with plastic wrap, and refrigerate until the dough has risen.

  4. Step 4.

    Line a baking sheet with a lightly floured non-terry cloth dish towel.

  5. Step 5.

    When the dough is ready, roll it out on a lightly floured surface into a rectangle about ½ inch thick, with a long end closest to you. Spread a little more than half of the apple mixture over the bottom half of the dough, leaving about a 1-inch border, then sprinkle about ¼ cup of the remaining cheese over the apples. Fold the top half of the dough over the apples to meet the bottom edge and pinch the edges to seal.

  6. Step 6.

    Rotate the dough 90 degrees. Sprinkle the remaining apple mixture and ¼ cup cheese over the bottom half. Fold the top half over the apples to meet the bottom edge and pinch the edges to seal.

  7. Step 7.

    Roll out the apple-filled dough into a rectangle about ½ inch thick. Cut the dough into 12 (2½-inch) square fritters. Pull the corners of each fritter up and toward the center and pinch to seal. Place the fritters on the lined baking sheet, leaving at least 1 inch between them.

  8. Step 8.

    Cover the fritters with a towel or plastic wrap and let them proof in a warm spot for 5 to 20 minutes. Then fry or bake as directed for the chosen dough. If frying, heat oil to 350°F and fry until deep caramel color, about 3 minutes per side.

  9. Step 9.

    Glaze the cooled fritters and sprinkle with a tiny bit of flaky sea salt, if desired.
