APPLE PIE
These apple pie doughnuts combine tart apples with warm spices, fried to golden perfection and glazed with cinnamon or caramel. A delightful twist on classic apple pie.

- 2 tbsp superfine sugar
- 1 tbsp freshly squeezed lemon juice
- 2 tsp arrowroot powder
- 1 tsp vanilla extract

- 1/4 tsp ground cinnamon
- 1 Apple Cider or Old-Fashioned Sour Cream dough
- 1 tbsp milk of choice or water
- 1 Cinnamon Spice or Caramel glaze

- 1 cup cooking apples, cut into ¼-inch dice

Step 1.
In a medium heavy-bottomed pot over medium heat, combine 1 cup diced cooking apples (¼-inch dice), 2 tablespoons superfine sugar, and 1 tablespoon lemon juice. Heat until the sugar dissolves, stirring occasionally.

Stir in 2 teaspoons arrowroot powder, 1 teaspoon vanilla extract, ¼ teaspoon ground allspice, and ¼ teaspoon ground cinnamon. Simmer until the filling thickens, about 2 minutes, stirring constantly. Remove from heat and set aside to cool slightly.

Step 3.
Prepare the chosen dough (Apple Cider or Old-Fashioned Sour Cream) as directed, but roll it out to just under ½ inch thick. Using a doughnut or cookie cutter, cut out 3-inch rounds. Roll out half of the rounds to about 3¼ inches in diameter.

Step 4.
To assemble, lightly brush each wider dough round with 1 tablespoon milk of choice or water (at room temperature). Place 1 tablespoon of the apple filling in the center and spread evenly, leaving a ¼-inch margin around the edge.

Top the filling with a smaller dough round. Gently pinch the top and bottom rounds together to seal the edges. Then recut the doughnut with the same 3-inch cutter to seal the edges firmly.

Fry the assembled doughnuts as directed in your recipe. Allow them to cool slightly before glazing with Cinnamon Spice or Caramel glaze.
