Prepare
- 12 soft potato hamburger buns, split horizontally
- Unsalted butter, softened, for the buns (optional)

- Blue Cheese–Yogurt Spread, optional

Step 1.
Prepare a hardwood fire for grilling, or heat a gas or charcoal grill to medium-high (about 450°F).

Step 2.
Divide 4 pounds ground beef into twelve 1/3-pound portions. Form each into an approximately 4-inch round patty, placing them on a baking sheet as you form them.

Step 3.
In a small bowl, mix together 1 tablespoon kosher salt, 2 teaspoons red pepper flakes, 1 teaspoon dried rosemary, 1 teaspoon dried thyme, 1 teaspoon flaky sea salt, and ¼ teaspoon freshly ground black pepper. Sprinkle the spice mixture evenly over the patties (about ½ teaspoon per patty). Set aside at room temperature while the grill heats.

Step 4.
Lightly butter the insides of 12 soft potato hamburger buns with softened unsalted butter (optional) and set aside.

Step 5.
When the grill is hot, brush the cooking grates clean. Place the patties on the grill seasoned side up. Grill with the lid closed (if using charcoal) for 6 to 8 minutes, turning once halfway through, until well marked on both sides. Cook 6 minutes for rare, 8 minutes for medium.

Step 6.
About 1 minute before the burgers are done, place a piece of candied bacon on each patty and add any cheese if desired. Close the grill lid and warm for 30 seconds to 1 minute. Transfer the patties to a platter.

Step 7.
Place the buttered buns cut side down on the grill, cover, and toast for about 30 seconds, until warmed and just barely marked. Transfer to a platter.

Step 8.
To serve, allow guests to build their own burgers with any of the toppings they prefer (candied bacon, pickled onions, fig spread, tomato jam, blue cheese-yogurt spread, burger sauce, lettuce, tomato, pickles, etc.).
