Gather these ingredients — no prep needed yet.

  • 3/4 cups plain Greek yogurt
  • 1/2 tbsp minced fresh mint or dill
  • 3/8 tsp table salt
  • 1/2 tbsp table salt
  • 2 1/4 lbs ground lamb
  • 1/2 tbsp ground cinnamon
  • 3/8 tsp pepper
  • 1 tbsp oil
  • 6 pita breads
  • 12 thin slices tomato

Prepare

  • 1.5 cucumber, 1/4 grated and 1/4 sliced thin, divided
  • 3 clove garlic, minced, divided
  • 1.5 romaine lettuce hearts, sliced thin

Let's Cook

  1. Step 1.

Combine yogurt, grated cucumber, mint, half the garlic, and 1/8 teaspoon salt in a bowl; cover and refrigerate tzatziki.

  2. Step 2.

Break up lamb into small pieces in a bowl; add cinnamon, pepper, remaining garlic, and remaining salt. Knead until combined.

  3. Step 3.

Shape mixture into six 1/2-inch-thick patties.

  4. Step 4.

Heat oil in a 12-inch nonstick skillet over medium-high heat until smoking. Add patties and cook until browned on first side, about 4 minutes.

  5. Step 5.

Flip patties, reduce heat to medium, and cook until browned on second side and tender, about 4 minutes. Transfer to paper towel-lined plate.

  6. Step 6.

Cut top 2 inches from one pita; discard or reserve. Place pita on plate, cover, and microwave until warm, about 30 seconds.

  7. Step 7.

Spread half the tzatziki inside pita; fill with half the lettuce, sliced cucumber, tomato slices, and lamb patties. Serve.
