Ingredients

  • 1/4 cup (4 turns around the pan in a light stream) extra-virgin olive oil
  • Tomato and Onion Salad, as an accompaniment
  • 1 pound spaghetti, cooked to al dente
  • Coarse salt
  • 1/4 cup finely chopped flat leaf parsley, a couple of handfuls
  • 1/2 teaspoon crushed red pepper flakes
  • 6 to 8 large cloves garlic, crushed and minced
  • 1 (2-ounce) tin anchovy fillets
  • Crusty bread, as an accompaniment

Step by Step method

  1. Step 1.

    Season with a little coarse salt, to your taste.

  2. Step 2.

    Toss spaghetti in the pan with parsley and the garlic oil

  3. Step 3.

    Break up anchovies with a wooden spoon until they melt away into the oil and garlic mixture.

  4. Step 4.

    Add anchovies, garlic, and pepper flakes to oil.

  5. Step 5.

    Add 1/4 cup extra-virgin olive oil.

  6. Step 6.

    Heat the a medium pan on medium low.

  7. Step 7.

    Serve with Tomato and Onion Salad and Crusty Bread.

  8. Step 8.

    Start cooking 1lb of spaghetti
