Collect

Gather these ingredients — no prep needed yet.

  • 1/2 tbsp cumin seeds
  • 5/9 lbs plain yogurt
  • 1 tsp caster/granulated sugar
  • 2 tsp chat masala
  • salt

Let's Cook

  1. Step 1.

In a small frying pan set over medium heat, toast the cumin seeds for about 1 minute, shaking the pan occasionally, until they release their aroma and become fragrant. Remove from heat immediately to prevent burning.

  2. Step 2.

Transfer the toasted cumin seeds to a mortar and grind them with a pestle until finely ground. Set aside.

  3. Step 3.

In a bowl, combine the plain yogurt, sugar, chat masala, salt, and the ground cumin seeds. Whisk or stir until the sugar and spices are fully incorporated and the mixture is smooth. Refrigerate in an airtight container for up to 1 week.
